I've never really been fond of soups. Although I have occasionally ordered them. During an exceptionally chilly weekend, I discovered that nothing appealed more for supper than soup with a sandwich, which prompted me to make it. The soup employs vegetable stock, yet I've discovered it has equally delicious results when using chicken stock instead. A helpful hint: Heat up the stock in the microwave prior to mixing it with the roasted veggies. Doing this guarantees that your soup remains piping hot. Blending scorching-hot vegetables with either cool or ambient-temperature stock can reduce the overall soup temperature, potentially necessitating an additional reheating step to reach the ideal serving warmth.
It’s Easy to Make
I enjoy this soup another reason being how simple it is to prepare. It truly appeals to me that most of the preparation occurs in the oven, allowing my hands to be free for other activities such as preparing a grilled cheese to go with it.
